And here is yet another apple pie recipe: this time it's a spicy apple pie with cinnamon, Ginger, nutmeg and cloves. Cinnamon glaze and with a truly irresistible scent, is the perfect dessert for these last months of winter, when the days are sunny but cold.

This recipe is perfect for those who love intense and spicy tastes: the scent and warm taste of cinnamon, Ginger, nutmeg and cloves go perfectly with a cup of hot tea. Better if a sweet Indian Chai or a citrus Earl Grey. The taste vaguely resembles that of gingerbread Christmas cookies. The process is very simple: I suggest you to use a donut mold for a more choreographic effect, especially for the glaze. I used this Nordic Ware mould, company that I recommend if you are a serial pastry chef, like me. At this point I just have to wish you a good day.

250 grams of flour 00 or specific for cakes

2 apples

100 grams caster sugar

2 whole eggs

100 grams of melted butter a pinch of salt

a sachet of baking powder (16 grams)

100 ml whole milk

1/2 teaspoon ground cinnamon

a teaspoon of ginger powder

a pinch of nutmeg

2 cloves crushed


150 grams powdered sugar

cinnamon powder, to taste

cold water, to taste


Spicy apple pie

The spicy apple pie is very easy to prepare and your home will smell delicious for hours. Break the eggs into a large bowl and whip them with sugar and a pinch of salt until the mixture is swollen and whitish. Volume must triple. In principle,, plus the egg and sugar mixture is swollen and frothy, softer will be the sweet.

Slowly add the sifted flour with baking powder, alternating with milk. Blend at low speed, to obtain a smooth dough without lumps. Combine the warm melted butter and spices according to your taste, mixing with care. The doses in this recipe are for a medium intensity spice, but if you prefer an even stronger taste, you can increase the doses.

Cut the apples into very small pieces. Incorporate the apples into the dough. Grease and flour a cake Pan: I used a mold for donut, but you can use a regular round cake pan with a hinged bottom. Pour the mixture, level and bake in a static oven at 180 degrees for 35-40 minutes. To check the cooking, always worth the toothpick test: tucked in the middle of the cake, must be dry. If not,, you can prolong the cooking for another 10 minutes by lowering the temperature to 170 degrees.

For the icing, mix the cinnamon with the icing sugar and add very little water, almost drop by drop, until adopting a thick batter but fluid enough to be 'poured' on the cake. Pour the glaze over the cold apple pie. Let stand a few minutes, so that it hardens. Bon appétit!
