Hot chocolate, and it's now Christmas. Today I leave you the recipe for the perfect hot chocolate, homemade. I am a chocolate-addict, I'm crazy about it. I like it dense and not too sweet. Say, almost to the limit of the consistency of the pudding. I flavor it with cinnamon and a pinch of chili powder, which gives her a very interested warm note. For the perfect hot chocolate recipe (always in my opinion), serve both bitter cocoa and extra dark chocolate, both of excellent quality. Like this, you will get a more intense taste and a beautiful dark color. If you want to avoid sugar, you can use the’eritritol: I have been using it for a long time to prepare sweets for dad which is hyperglycemic and is an exceptional product. Or the liquid sweetener. The use of cornstarch or potato starch instead of flour, it is recommended to obtain a hot chocolate in a velvety cup and without lumps.

One recommendation: if you want to add whipped cream to hot chocolate (and I always add it!), chocolate doesn't have to be too hot. Once you put the chocolate in the cup, let it cool for at least 5 minutes, so that a warm film is formed on top. Otherwise, you will find yourself with a lake of melted cream. 120 grams of unsweetened cocoa powder

800 milliliters of whole milk

120 grams of dark chocolate

150 grams of caster sugar (or eritritol)

60 grams of cornstarch or potato starch

cinnamon powder, to taste

a pinch of chilli powder (Optional)

whipped cream with icing sugar, to taste

to decorate: bitter cocoa, cinnamon, dried fruit praline, chocolates, sprinkles, biscuits...


The perfect hot chocolate in the cup is simple to prepare, as you see in this very short video recipe. First of all, put the cornstarch in a saucepan, sugar (or ethritritol) and bitter cocoa. in powder. Stir so that the ingredients are well mixed. Slowly add a little milk.

Stir with a whisk, by hand, until milk and powders are mixed in a sort of batter. Continue by pouring the milk (flush) until exhaustion. Add cinnamon and a pinch of chili pepper (If you like).

Cook the chocolate over very low heat, stirring constantly, until it comes to a boil. Add the dark chocolate and stir until melted. Pour chocolate into a cup. At this point, you can add a pinch of cinnamon or add bitter cocoa and enjoy it. Or, allow to cool for at least 5 minutes before adding the whipped cream with icing sugar. Decorate as you like.
