A great classic of Christmas or New Year's fish menus: the recipe of salmon marinated in orange is a real joker. Because it's very easy to prepare, but elegant and refined. Obviously, you can also use another fish. Whatever fish you choose, however, it is important that it is lowered in temperature. Often salmon, especially if wild, is already killed in the fish market. If not,, instead, you have to do it putting fish in the freezer for at least 4 days at -19 degrees. In this way the possible bacterial load inside the fish will be reset. I always keep a salmon fillet in the freezer, ready for a good HOMEMADE SUSHI or for a SALMON AU GRATIN or GRILLED WITH GUACAMOLE and RED RICE.
The process for marinating is very simple: It is a cold marinade with oil, lemon, orange juice and aromatic herbs that serve only to flavor the fish. Duration, it depends on you: I don't like salmon having too strong citrus taste. And that it becomes whitish. I prefer that, since the fish is killed, feel good the taste of salmon, that you understand that it is raw. Then I make short marinades, of 30-40 minutthe. Though you can also marinate it for 6-12 hours: In this case, salmon will turn whitish and change texture, while taking strong notes of lemon at the same time. The choice is yours.
I buy the whole salmon fillet and cut it myself into thin slices, but you can also cut it in fishmongers. Obviously, the marinating times for a salmon already cut into slices are shorter than those of a whole fillet. If you don't like raw fish, you can season in the same way the smoked salmon: obviously in this case the marinade must necessarily be short, 30 minutes maximum.
As a condiment, I suggest you use in addition to slices of orange, also diny (Cool the secco), pomegranate seeds, black pepper and pink pepper. Orange marinated salmon is a really simple recipe, almost trivial, but it will always remain an ever green, especially among the STARTERS CHRISTMAS TO PREPARE IN ADVANCE. Have a good day!
