When autumn arrives, we start turning on the oven again: and then pizza! Or, better, pizza with stracchino ham and artichokes, with the usual dough for pizza in long leavening ma con seven-grain flour. Tasty and fragrant.

The topping for a perfect pizza

Know that this pizza is crazy: the smoked cooked ham, I used a Praga Stg, goes very well with the artichokes in oil. Indeed, if you find artichokes in oil but grilled the result will be exceptional. Stracchino adds softness and creaminess. On the basis of the pizza we put two tablespoons of tomato sauce well restricted, but if you prefer you can try this pizza in a white version. The Marjoram in my opinion it is indispensable, as well as a little’ by Rosemary freshly chopped.

The pizza dough with 7 cereals

The dark color of the dough is due to the presence of 7-grain flour with sesame seeds, pumpkin, Sunflower. If you prefer a normal dough, you can put only double zero flour. As always for the dough process and all the suggestions on leavening, temperatures and types of baking tray I refer you to the recipe of the pizza in long leavening. The dough method and the rest times remain the same and I remind you that 1 gram of dry brewer's yeast is equal to a teaspoon satin and scarce. It is important that the cheese you put on the pizza does not release much liquid: cut the mozzarella the night before and leave everything in the refrigerator in a colander, so that it loses as much water as possible.

HAM PIZZA, STRACCHINO AND ARTICHOKES

Ingredients

FOR THE DOUGH

400 grams of flour with 7 cereals

200 grams of double zero flour

1 gram dry brewer's yeast (or 2,5 grams fresh or 30 grams of mother yeast)

10 grams of salt

400 milliliters of natural mineral water

FOR THE DRESSING

2 tablespoons tomato puree (Optional)

200 grams of smoked ham Prague

250 grams of fior di latte mozzarella

250 grams of soft cheese

artichokes in roasted oil, to taste

marjoram and/or rosemary, to taste

ground black pepper, to taste

extra virgin olive oil, to taste

Procedure

Pizza stracchino, ham and artichokes

Prepared the dough following the long-leavened pizza recipe but with the seven-grain flour and double zero, as reported in the ingredients. Follow the instructions and, when the bakeries are almost ready to cook, preheat the oven to the highest possible temperature. If you have refractory stone, before turning on the oven you must insert it into the oven turned off in the appropriate space on the bottom or as close as possible to the bottom.

For seasoning: I suggest you cut the mozzarella into slices or cubes the day before and put it in a colander so that it loses as much liquid as possible. It is important so that the pizza disc does not get too wet during cooking.

Eliminate artichoke oil, draining them with care, chop rosemary and marjoram.

Roll out the disc for the pizza as you see in this VIDEO TUTORIAL, spread on the disc 1-2 tablespoons of tomato sauce (if you prefer a white pizza simply grease it with very little olive oil mixed with a little water and cook on refractory stone for about 3 minutes or in a baking tray for 7-8 minutes at least. Take the pizza out of the oven and add the diced mozzarella.

Bake for another 2 minutes if on refractory stone or 4-5 in a baking sheet. Remove from oven and, Quickly, complete the pizza as you see in the VIDEO TUTORIAL, distributing smoked cooked ham on the surface, the stracchino in small pieces (will melt with the heat of the pizza) and artichokes. Complete with marjoram and/or finely chopped rosemary and serve immediately. Bon appétit!
