Chocolate meringue mousse with berries: a sweet cover that you can prepare in 15 minutes, online, without cooking and getting just two bowls. The parfait is made with cream, inside with much dark chocolate and nuts and is accompanied by a cascade of berries. The recipe is not mine but the famous Nigella Lawson. She prepares it only with meringues and cream, I enriched as if it were a stracciatella Parfait, with dark chocolate, chopped walnuts and a little’ Cointreau, because I love the vibrant flavors and with many shades.

Since the semifreddo is sweet, I served with berries, pleasantly sour: strawberries, Cranberries and currants powdered sugar. Preparation is a snap, 15 minutes are more than enough real: just mix crushed meringues, chopped nuts and chocolate whipped cream. One night in the freezer and the dessert is ready. You can also enrich the chocolate meringue parfait with berries with a dark chocolate sauce, If you are truly delicious. O with bits of candied orange peel to give a wonderful scent of citrus. I've put in a mold skullcap, to get this beautiful dome shape, classic of Sicilian schiumoni. But you can use a mold for plum cake and slice the parfait ice cream as a socket. Or even use a regular cake pan, so you will get a magnificent iced cake. For a formal dinner or friends you will make a beautiful figure. Ingredients

DOSES FOR A MOLD BY ZUCCOTTO DA 22 CM IN DIAMETER:

750 ml of whipping cream
120 grams powdered sugar
3 tbsp Cointreau
1 tablespoon organic Bourbon vanilla extract
150 grams of meringues (If you want to make them at home you will find here the recipe, otherwise you can buy them)
150 grams of dark chocolate
100 grams of walnuts (or hazelnuts or almonds)
mixed berries as required
granulated sugar to decorate as required

Berry Meringue Parfait

The chocolate meringue parfait with berries can be prepared in 10 minutes and is no real cooking.

Coarsely chop the meringues, the dark chocolate and nuts. Whisk, but not too firm, the cream with vanilla extract, the Cointreau and icing sugar. Combine the chopped meringues, nuts and chocolate cream, little by little, mixing with a spatula from the other down until you have amalgamated all the ingredients.

Cover the mold you've chosen with plastic wrap and pour the mixture. Cover with more film and store in the freezer over night.

Wash the fruit and patting it lightly, then sprinkle granulated sugar. Unmould the Parfait by removing the plastic wrap, Garnish with fresh fruit and serve immediately. Bon appétit!

Hello, I follow your blog for some time and your recipes are great! This is a must try dessert but I doubt there is a…Once prepared should be placed in the refrigerator as you say or freezer? Because in the first case would be more a mousse than a Parfait! Congratulations!

Hello Monica and thank you very much! The dessert is a frozen dessert and it goes in the freezer, in the freezer, otherwise melts! And you have to garnish with fruits before serving! Let me know!

Apart from the sugar over the meringue is not quite so sweet I can take super bitter dark chocolate ... and reduce sugar 150 attracts me i like this kind of semifreddo.

Nay Edvige, You can adjust how you want the sugar! put less because so much chocolate and meringue are already so tasty, and then the fresh fruit helps! Try it! I embrace you!

Hi Mila! See if your friends don't live too far away, Since it's still a Parfait, I'm sure it will be a huge success. To give the berries on the cake without letting them fall in transport I suggest you do a casting (room temperature) melted chocolate and lay them over, then put in the freezer. Melt during the journey! Let me know! ADA
