I divided the first courses with pumpkin into 3 sections: first courses of fresh or dried pasta, Risotto and of course soups and velvety with pumpkin. Pumpkin is great on its own but it's versatile, and goes perfectly with many ingredients. Funghi, chestnuts, legumes, cheeses such as gorgonzola or taleggio cheese, sausage and bacon, dried fruits such as walnuts and hazelnuts, and even with fish. First courses with pumpkin: fresh or dried pasta
- FRESH PASTA OF SEMOLINA AND PUMPKIN: a fresh pasta that is homemade in 10 minutes, with pumpkin pulp. To be seasoned as you prefer.
- PURPLE POTATO GNOCCHI WITH PUMPKIN AND BONITO: pumpkin and fish, perfect match. Try this perfect sauce with homemade gnocchi but also with dry pasta.
