Tasty grilled eggplants are a perfect summer side dish for both meat and fish dishes. I love serving them as an appetizer, with buffalo mozzarella and homemade bread. Seasoned with a shredded herb, oil and spices, they're really delicious and inviting, as you can see in this VIDEO RECIPE IN 30 SECONDS. Among the summer side dishes is one of my favorites along with the BAKED GRATIN SUMMER VEGETABLES and at EGGPLANT PIZZAS. And it's also a recipe suitable for vegans and gluten intolerants.
Although aubergine is preferred fried in the family (from the classic Parmigiana at MEATBALLS until the inevitable CAPONATA) , I find that grilled or baked keeps its flavor unchanged. Which is sweetish but with a slight bitter final note. Tasty grilled eggplants are very simple to make. The only precaution is to use a well-hot cast iron grill and not overcoo them, otherwise they become hard and dry.
The perfect condiment for tasty grilled eggplants
As for the seasoning, I prepare a parsley mite, garlic, Chili, salt and abundant extra virgin olive oil. You can also add basil, Mint, thyme and oregano, all Mediterranean perfumes prefected with eggplants. I also like to put a drop of wine vinegar in this mite. But only if I don't serve eggplants with fish. If you use vinegar, I suggest you add oregano as well, a perfect match. Is’ possible, if you want to serve them with fish for example, add to the mite also some anchovy underlium finely pounded.
For a perfect result, I suggest you season the grilled aubergines in layers, so that the seasoning spreads well on each slice. Tasty grilled eggplants are better when made 2-3 hours in advance (but also a day in advance). Store them in the refrigerator covered with food film and leave them for 30 minutes at room temperature before serving. 3 striped or violet aubergines
extra virgin olive oil, to taste
salt and pepper, to taste
a small piece of chili pepper
parsley, Basil, oregano, Thyme, Mint (as Favorites, one grass or all)
two tablespoons red wine vinegar (Optional)
The recipe of tasty grilled eggplants is very simple and fast, as you see in VIDEO RECIPE IN 30 SECONDS.
Slice the aubergines in the direction of width into round slices half an inch thick at most. Preheat a cast iron grill and, once hot, arrange eggplants without adding oil or other fats. Cook over low heat until a stripe has formed on the surface of the aubergines due to the grill. Turn the aubergines and cook again until they become whitish and hold. Don't over-cook them, otherwise they will become dry and hard. They must be yielding but still substantial.
While the Eggplant bake, prepare the mince by making thin slices, or finely chopping, garlic and chilli, the parsley and other herbs you have chosen. Add salt and plenty of extra virgin olive oil. If you serve the tasty aubergines grilled with meat or as an appetizer, also add two tablespoons of wine vinegar. Mix well.
As the eggplants are cooked, season them with aromatic shredding, layering them to each other until the ingredients are exhausted. Cover with food film and let marinate in the seasoning for at least 2-3 hours. You can store grilled aubergines in the refrigerator for one or two days, reminding you to leave them at room temperature for at least 30 minutes before serving. Bon appétit!
