Let's start with the shortcrust pastry: you have to make the pastry. Work the flour with the cold butter cut into cubes and salt. When you have obtained a dough with large crumbs, combine the yolk, sugar, the lemon zest and continue processing until you get a smooth and homogeneous dough. If the dough is a bit dry you can add one or two teaspoons of milk or water. Roll out the dough as you see in the video recipe, forming a rectangle about 1 and a half centimeters high and put it in the refrigerator for 30 minutes.

When the pastry is cold, trim the edges of the dough so that they are straight and cut sticks as you see in the video recipe. Preheat the oven to 180 degrees static and bake the cookie sticks for 15 minutes or until they are lightly browned. Allow to cool completely.

While the cookie sticks cool down, melt the chocolate you have chosen in a bain-marie. Once melted, pour it into a glass and dip each stick into the chocolate so that it is covered for a third. Sprinkle immediately with chopped pistachios and put on a wire rack until the chocolate has completely solidified, as you see in video recipe. And Bon Appetit!
