Ingredients

250 grams of buffalo mozzarella from Campania D.O.P-

chicory

a clove of garlic

extra virgin olive oil

8 anchovies in oil

white wine vinegar

salt and pepper

Gaeta PDO olives

Pillow

homemade bread

4 radishes

 

Procedure

The recipe for puntarelle salad and buffalo mozzarella from Campania D.O.P. it's super simple, as you can see from the VIDEO RECIPE on my YouTube channel. First wash the chicory well, then dry them carefully. For the anchovy sauce, Crush a clove of garlic with a pinch of salt in a mortar. Add the anchovies and a little' extra virgin olive oil and crush until creamy. Add extra virgin olive oil and vinegar to taste until the desired consistency is obtained: creamy but fluid enough.

Slice the bacon into slices half a centimeter thick and then cut it into cubes. Brown the bacon in a pan without more fat until crispy. Set aside. Cut the bread into cubes and brown it in a drizzle of extra virgin olive oil until golden brown.

Wash the radishes and slice them finely.

Thinly slice the buffalo mozzarella from Campania D.O.P., similar to a carpaccio.

Arrange the puntarelle on the plate, Season with a drizzle of extra virgin olive oil and then with the anchovy sauce. Arrange the buffalo mozzarella from Campania D.O.P. on the puntarelle., add the olives from Gaeta, the crispy bacon, Radish slices and golden bread.
