Chocolate Cupcakes with Italian meringue

Super-soft chocolate cupcake with meringue. But beware, They are not the usual chocolate cupcake: the base is the famous Devil's Food Cake American, in the recipe of Hummingbirdbakery: they are very soft, fragrant and aromatic. The meringue is sweet, exquisite and, if you have a cannellino for caramellizzarla, even better. I do not know if you noticed that the cupcake is in pretty pink cups and saucers: cups but are not silicone molds, where I cooked directly sweets: I find it a brilliant idea. Ingredients for 12 cupcakes:

  • 100 grams of flour 00
  • 20 grams of cocoa powder
  • 140 grams of superfine sugar
  • One-half teaspoon of baking powder for cakes
  • 1 pinch of salt
  • 2 tablespoons rum or brandy
  • 40 grams soft butter
  • 120 ml whole milk
  • 1 egg
  • a teaspoon of vanilla extract
  • tails of dark chocolate to decorate to taste
  • cups of silicone for cupcakes (I use those brand Birkmann buy Zalando)
  • cannellino to caramelize the meringue (Optional)
  • for the frosting

Prerscaldare oven to 170 degrees. Put flour in a bowl, cocoa, sugar, Salt, baking powder and softened butter and blend with a mixer or the mixer to form a sandy compound. Whisk the eggs in a bowl with the rum, the milk and vanilla extract and merge plane prepares elaborate this compound to the mixture previously always whisking. Do not work too because otherwise the mixture will be fluffy little after cooking.

Pour the mixture into the cups in silicone or into cups for muffins, filling them up to two-thirds height and bake for 20-25 minutes: resting against a finger over the cakes should be soft. Remove from oven and allow to cool.

Put the meringue in a pastry bag with star tip and decorate with a very generous helping of meringue sweets. If you do not have cannellino to caramelize the meringue can get this effect by putting it for 2 minutes under the grill. Then decorated with tails of dark chocolate and prepared a nice cafe for your Valentine's Day breakfast!
