Potato pudding, Chard and cheese salad with walnuts

A hearty main dish and vegetarian: Today I leave you the recipe for a dish dinner saves and empty fridge, the potato patty, Chard and cheese accompanied by a salad of lamb's lettuce, nuts, raisins and gorgonzola. Is’ a flat ' recycling ', born in an evening where I didn't feel like cooking and I hadn't had time to go shopping. I found in the fridge a while’ Swiss chard, potatoes and smoked cheese I always home, as even a little’ of salad, dried fruit and cheese or blue cheese. Virtue of necessity, It is said and so I arranged by creating this tasty pie, with spicy and sweet taste particular between. The result was appreciated :-).

Ingredients for 4 people:

for the pie

  • 1 kg of yellow-fleshed potatoes
  • 250 grams of smoked cheese
  • an egg
  • 50 grams of grated Parmesan cheese
  • 30 grams of grated pecorino cheese
  • 40 grams butter
  • salt and pepper
  • extra virgin olive oil as required
  • 400 grams of chard
  • bread crumbs to sprinkle the Pan
  • a little butter to grease the Pan

for salad

  • corn quanto basta
  • 80 grams of spicy gorgonzola
  • a handful of golden raisins
  • 10 walnuts
  • Balsamic vinegar as required
  • extra virgin olive oil as required
  • salt to taste

Preheat the oven at 180 degrees. Boil the potatoes in salted water, Peel and mash with potato masher. While they are still warm add the butter, the Parmesan, pecorino, the egg and season with salt and pepper. Blanch the chard in salted water for a minute and then put it on the paper towel.

Cut the smoked cheese, thinly sliced. Grease a baking dish with the butter and then sprinkle with breadcrumbs. Place half the dough into the pan of potatoes, then the smoked cheese, the rest of the potatoes and cover with the leaves of chard. Brush the beets evenly with a drizzle of olive oil and bake for 30 minutes.

Allow to cool 10 minutes and, Meanwhile, prepare the salad by putting in a bowl the corn salad, raisins and nuts. Season everything with an emulsion of balsamic vinegar, oil and salt and arrange the salad on the plate, garnishing it with diced gorgonzola: It will be a perfect outline for Patty.

THE PAIRING: for this dish we choose a beer from the microbrewery crafts produced in Sicily Old Company, in the province of Catania, in Belpasso: Timogna It is a wheat beer, with aromas of fresh yeast and fruit, full bodied with ripe Apple and banana taste.
