Wasn't hideous enough chicken with peas

Chicken and peas, but a greedy version that will appeal to even the smallest. Ingredients for 4 people:

  • 800 grams of chicken breasts

  • salt and pepper

Put the chicken breasts between two sheets of parchment paper and beat them with a meat mallet so they become thin and uniform in thickness and cut them into pieces of approximately 5 cm to 6.

In a plate put a generous amount of oil with a pinch of salt and marinate the chicken breasts, making sure that they are all well unti. Preheat oven to 200 degrees ventilated. Put in a dish breadcrumbs, the Parmesan, pecorino, a pinch of salt (sample because the cheeses are already savoury biscuits) and panare repeatedly the chicken in the mixture, making sure it is evenly coated with a layer of bread crumbs.

Arrange on baking sheet covered with parchment paper and sprinkle the chicken slices and well oiled with a little olive oil. Bake for about 15 minutes, turning them halfway through cooking to make dorino well on both sides. Meanwhile, boil in salted water the peas.

Once cooked drain them well and pass them to the mixer, gradually adding a little olive oil until you have a creamy but firm and shiny. Serve by putting to one side the pea cream (We used a pastry rings square) on which you will have poured a little olive oil and sprinkled a little’ black pepper, and on the other the chicken wasn't hideous enough on top of each other. Garnish with a slice of lemon.

THE PAIRING: a light Breading like this recipe could be accompanied by a white young and delicate as East! EST! EST! di Montefiascone Doc. For those who would rather match a craft beer, good point on a beer not overly sweet and tending to honey. A good choice might be the Moinette Blonde, available in many beershop Italians.  For those who loved the flavors bolder recommend a triple, name by which shows the strongest beers produced by Trappist Brewers. Ideal, for those who could find, the Italian Extraomnes Tripel.
