Ingredients for 4 people:
- 800 grams of chicken breasts

Put the chicken breasts between two sheets of parchment paper and beat them with a meat mallet so they become thin and uniform in thickness and cut them into pieces of approximately 5 cm to 6.
In a plate put a generous amount of oil with a pinch of salt and marinate the chicken breasts, making sure that they are all well unti. Preheat oven to 200 degrees ventilated. Put in a dish breadcrumbs, the Parmesan, pecorino, a pinch of salt (sample because the cheeses are already savoury biscuits) and panare repeatedly the chicken in the mixture, making sure it is evenly coated with a layer of bread crumbs.

Once cooked drain them well and pass them to the mixer, gradually adding a little olive oil until you have a creamy but firm and shiny. Serve by putting to one side the pea cream (We used a pastry rings square) on which you will have poured a little olive oil and sprinkled a little’ black pepper, and on the other the chicken wasn't hideous enough on top of each other. Garnish with a slice of lemon.
