Potatoe bread, ham and chives

Do you ever prepare the cutlets, the meatballs or whatever requires a coating based on egg and breadcrumbs, and who will advance just these two ingredients? I do, It happens all the time. And because by nature I don't throw anything, I leave you this recipe for recycling the egg and breadcrumbs advanced from Breading: Potatoe bread. Obviously you can embellish as you like, with salami, cheese, vegetables, or even leave them just as they are. I made smoked ham, some’ Parmesan cheese and chives: I served as an aperitif before dinner and literally went like hot cakes. When I said that they were just a recycle I have believed. I'll let the doses for 4 people as if you were to ask you specifically, but make this recipe to recycle leftovers!!!

Ingredients for 4 people:

  • 2 eggs
  • stale breadcrumbs as required
  • chopped chives just enough
  • 100 grams of ham in a single slice
  • salt and pepper
  • 20 grams of grated Parmesan cheese
  • peanut oil for frying as required

Lightly beat the eggs with a fork, Add the ham, diced very small, the finely chopped chives, season with salt, pepper and then add as much bread crumbs as needed to obtain a soft but moldable.

The mixture should not be too hard, otherwise the croquettes are dry, so do not overdo it with the breadcrumbs, put a little at a time. Once ready, cut out some croquettes as big as a walnut and put them one by one in the breadcrumbs.

FRY in abundant oil seeds and put them to drain on an absorbent paper towel. They are perfect to munch on during the aperitif waiting for dinner!
