Fried chicken and mayonnaise

Comfort food to me: Breaded chicken strips and fried with lemon mayonnaise and chives. I make homemade mayonnaise because I like best (I'm really a one-off because it is pretty hefty), But if you want to truly make very little effort then buy it ready. Is’ my version of American fried chicken, without skin nor bones, all pulp: the kids are crazy, but the mayonnaise prefer ketchup. A nice salad and dinner is served.

Ingredients for 4 people:

for the fried chicken:

  •  800 grams of chicken breast well beaten
  • salt to taste
  • enough flour for the Breading
  • 3 whole eggs
  • breadcrumbs as required for the Breading
  • sunflower oil for frying as required

for the mayonnaise:

  • 4 egg yolks
  • about 300 milliliters of olive oil
  • the juice of half a lemon
  • a handful of chopped chives
  • salt to taste

For the mayonnaise, take care to remove the eggs from the fridge with a few hours in advance, as well as the lemon. Put the yolks in a bowl and start beating it. When they become lighter and fluffy, begin adding the oil slowly, almost drip and do so at maximum speed of mixer until the egg yolks and the oil are blended into a thick and yellow. Now, always pianissimo, drop by drop, Add the lemon juice while continuing to whisk. Finally, season with salt and add the finely chopped chives. Put the mayonnaise in the refrigerator with plastic wrap in contact with the surface.

For the fried chicken, cut the chicken breasts, You must be well off the beaten path, thin and thick uniform, into thin strips about 2 cm. Prepared in a pot the flour, the eggs slightly beaten and add salt and breadcrumbs, also after a while’ salty. Pass the chicken in flour, then in egg and bread crumbs and FRY in plenty of oil sunflower seeds.

Serve the fried chicken hot and accompanied by mayonnaise and slice of lemon.
