Chicken Salad, potatoes, Savoy cabbage with bacon and sour cream. I will tell you, I'm really proud of this dish, I wanted to reinterpret a traditional German dish, grilled chicken wrapped in bacon with roasted potatoes and sauerkraut. In my interpretation, This dish from osteria has become an Italian salad, light and color, where the chicken is first boiled in aromatic broth and then browned to grid, boiled potatoes, the cabbage stew. Ingredients for 4 people:
- 4 slices of chicken breast
- a carrot, an onion, a stick of celery and a bay leaf to the broth
- 4 medium potatoes
- 1 Fuji Apple or Stark
- 6 thin slices of bacon
- 250 grams of cabbage
- half fresh onion
- 4 Tablespoons extra virgin olive oil
- 4 walnuts chopped

- a chopped mixture of fresh herbs: lemon thyme, Marjoram, oregano, chives
- the grated rind of half a lemon
- Lamb's lettuce or salad as required
Prepare a broth with onion, the carrot, the celery and bay leaf, Cook 40 minutes and then add the chicken breasts. Cook for 20 minutes and set aside the chicken breasts (the broth you can keep it and use it to prepare a risotto).
Boil the potatoes in salted water and , Once cooked, Peel and leave to cool, then make them into small pieces and regular.
Cut the bacon into thin strips and FRY in a pan without any fat until crisp. Drain fat and set aside.
Thinly slice the onion and cabbage and toss in pan with oil and, If necessary, warm water or chicken broth until they are slightly wilted and the cabbage won't have taken a golden color. Season with salt, pepper and set aside.
Grill the chicken breasts in a pan slightly greased with oil until golden brown, season with salt and pepper, then leave to cool and cut into regular cubes.
Wash the Apple, cut into slices, remove the seeds and the hard parts and make it into pieces.
Finely chop the herbs and mix sour cream, Add a little salt and pepper.
Now we come all'impiattamento: put on a bed of salad plate, then sprinkle on Grilled Chicken cubes, the Apple slices, the diced potato, the strips of bacon, some roughly chopped walnut and cabbage stew. Salad, put a few drops of sour cream and serve.
