Spicy squid soup with spicy fried rice: I invented this dish by chance and it became a fixture of our fish dinners. Spicy squid soup is a quick and easy seafood recipe, that I serve with plenty of homemade bread or with a tantalizing cardamom fried rice. As you can see in the VIDEO RECIPE STEP BY STEP, prepare the spicy squid soup is very simple and very few ingredients are enough. The only one you might have to buy, why maybe you don't have it in the house, it's fresh ginger. For the rest, you only need garlic, Onion, chillies, parsley and peeled tomatoes. A very fast and really good alternative to the classic (and hardworking) FISH SOUP o al GOULASH DI PALAMITA, a particular stew with a spicy taste.
You can use squid indifferently (even frozen if you don't find fresh ones) or the totani, even if the latter require longer cooking. On the other hand, they are also tastier than squid and I prefer them even when I prepare them GLUTE RIPIENES or TheN MOIST WITH POTATOES. Spicy fried rice: the perfect side dish for spicy squid soup
Garlic, Chili, ginger and onion make the soup spicy and aromatic. In my opinion the perfect match are bruschetta with extra virgin olive oil, if you prefer to focus more on Italianness. Or my favorite choice: fried basmati rice. Preparing it is very simple. The ingredients are garlic, fresh onion, Ginger, Chili, coconut oil (or extra virgin olive oil) and cardamom. Is’ just boil an aromatic rice like Basmati, the Apollo or the Ganges, drain it very al dente and let it cool.
Meanwhile chop garlic, Onion, ginger and chilli, then remove the cardamom seeds from the pods and brown everything over low heat in coconut oil or extra virgin olive oil. When a celestial scent will be released from the pan, add the cold rice and stir. Leave to cook over medium heat for 3-4 minutes, so that the portion of rice on the bottom of the pan becomes crispy, stir and cook again 3-4 minutes. This way you'll get a tasty rice, spicy, crispy and delicious.

1 kilogram of squid

Clean the garlic, ginger and onion and finely chop. You can also grate them, If you prefer. Fry in a large garlic pan, Ginger, onion and chilli in extra virgin olive oil, over a very low heat. Add squid, mix and, over high heat, brown the squid until they have changed color to become rosy. Add half the parsley and blend with the white wine.
As alcohol evaporates, hand-break the peeled tomatoes. Then, add the tomatoes and all the liquid to the squid soup. Salt and cook over low heat for 40 minutes, taste occasionally to season with salt.
When the squid will be tender, discover and cook another 5-10 minutes, until the soup sauce is the desired density. Add a little more chopped parsley and serve the boiling soup, accompanying it with toasted homemade bread and greed with extra virgin olive oil, or with the cardamom fried rice of which I gave you the recipe in the introduction.
