Tzatziki: the basic ingredients of the original Greek recipe

The original Greek recipe for Tzatziki involves the use of the very good strained yoghurt: if you have been to Greece, but also in Turkey, you may have noticed that yogurt has a particular and delicious color and texture. In Italy there are two or three types of Greek yogurt on the market suitable for this recipe. The other key ingredients are cucumbers, that They are used with the whole peel, garlic, l & #8217; olive oil.

To make the sauce slightly sour you can use a few drops of lemon or wine vinegar, depending on your taste. I definitely prefer the vinegar. It is essential to let the grated cucumbers drain for a couple of hours in the refrigerator. Do not throw away cucumber water though, It is very fresh and rich in mineral salts and I suggest you Turn it into a summer drink by adding lemon slices and still or sparkling mineral water.

Yet, the Greek cucumber and yogurt sauce does not include the use of oregano, although I admit that in my opinion the balsamic oregano goes well with the taste of this dish. The herbs 'Admitted’ On the other hand, they are dill or the Mint: choose the one you prefer. I recommend: prepare the Tzatziki sauce at least 3-4 hours in advance and store it in the refrigerator. 500 grams of whole Greek yogurt poured

Tzatziki: original recipe of Greek sauce

The recipe for the Greek sauce Tzatziki is really simple, as you can understand from the VIDEO RECIPE step by step. The most important thing is to grate the cucumber with all the peel (make sure it's organic) and put it in a colander: store grated cucumber in the refrigerator, covered with plastic wrap and leave it for at least 2 hours. You can also add a weight on top of the cucumber, so that it loses as much vegetation water as possible.

As I told you before, do not throw away cucumber water: it's fresh, rich in vitamins and mineral salts and you can drink it as it is or use it for refreshing and thirst-quenching cocktails by adding slices of lemon, carbonated or tonic water.

While cucumber loses vegetation water, put the yogurt in a bowl, add salt to taste, extra virgin olive oil and lemon juice or vinegar and mix well. Squeeze the cucumber well and add it to the sauce. Stir again until you get a soft and creamy sauce and add the fresh mint or dill.

Store Tzatziki sauce in the refrigerator, covered with foil for food contact, for at least three hours. Leave it at room temperature for 10 minutes before serving. Bon appétit!
