- DOSE OF A PIE 20-22 CM IN DIAMETER:
- 8 small pears and mature enough
- a tablespoon of lemon juice
- 120 grams of butter for the dough
- 120 brown sugar
- 20 grams of butter for cooking pears
- 2 tablespoon brown sugar for baking of pears
- a ginger root of about 4 cm
- organic vanilla extract or vanilla powder, to taste
- 2 whole eggs
- 100 grams of almond flour
- 100 grams of flour 00
- 10 grams of baking powder
- 4 tablespoons milk
- FOR streusel:
- 80 grams of flour 00
- 30 grams of coarsely chopped almonds
- 50 grams of brown sugar
- 60 grams of butter, very cold
- cinnamon powder as required
- a pinch of salt
