Torta salata funghi e pancetta

Savory pie with mushrooms and bacon: For me, it's always time for a Quiche. Whether you use ready-made shortcrust pastry, is that homemade (objectively better, as I did in the recipe of savory pie mushrooms and taleggio Dop)), Savoury pies are a practical and quick solution to solve the problem of lunch or dinner. In recipe video on my You Tube channel (Sign up and turn on notifications) You can see how simple it is to prepare.

You can use mixed fresh mushrooms, but also Frozen mushrooms. So you won't waste that bag of mushrooms that, I'm sure, has long been lying in your freezer. I enriched the savory pie with Bacon browned (you can also replace it with chopped speck) and cheese soft. I used Brie, but you can also use Camembert, fresh scamorza cheese, smoked cheese. On the other hand, Savory pies are always perfect recipes for Recycle leftovers or ingredients that must be consumed. You have already taken a look at all my QUICHES OF RECIPES?

Just prepare a salad, For example l’Sicilian salad with oranges and seasonal fennel, and the mushroom and bacon pie will give you a sumptuous dinner. And have a look at all my RECIPES WITH MUSHROOMS: I love this versatile ingredient and, when it's in season, I can't resist in front of a TALEGGIO POLENTA WITH MUSHROOMS or a simple PASTA WITH MUSHROOMS. And now I wish you good day!

extra virgin olive oil

Savory pie mushrooms and baconThe recipe for mushroom and bacon pie is very simple, especially if you use ready-made shortcrust pastry, as you see in VIDEO RECIPE. Although the homemade brisée, like the one I used in the quiche mushrooms and taleggio cheese, it's definitely better.

Clean the mushrooms, eliminating the tail from the stem, and rub them with a damp cloth to remove soil residues. Cut the mushrooms into slices not too thin and sauté them in a pan with a clove of garlic, extra virgin olive oil, salt and freshly ground black pepper. You can follow the same procedure with frozen mushrooms.

For the filling, Put the whole eggs and egg yolks in a bowl, chopped parsley, Parmigiano Reggiano and cream. Beat until a homogeneous mixture is obtained, then season with salt and pepper.

Cut the cheese into cubes and brown the bacon, sena other fats, until golden and crispy. As you can see in the VIDEO RECIPE, Now you just have to grease and flour the cake pan and cover it with the shortcrust pastry. Arrange the browned bacon inside, diced cheese and mushrooms. Cover with egg and cream mixture. Preheat the oven to 180 degrees and, when it will be at temperature, Bake the savory pie with mushrooms and bacon for 20 minutes. Then lower the temperature to 160 degrees and continue cooking for another 10 minutes. . Let the pie rest for 10 minutes before serving. It is also excellent at room temperature. Bon appétit!

Hi Ada,
I would like to try this recipe,
but the pan of what size must be?

Ada Parisi February 7, 2023 - 17:35

Hello Marilisa, 26-28 cm. But if you use a smaller one it simply gets taller. A warm greeting
