The pineapple skewers and baked salmon are a second course of fish quick and easy to prepare. Baking in the oven means that there is no fishy smell at home and you will only have the pleasure of eating these really delicious skewers, even if light. The secret is marinate salmon with extra virgin olive oil, lemon, fresh ginger root for at least 30 minutes. If you love spicy you can also add a little’ of fresh chili pepper. So you will give the skewers an extra sprint.
Obviously you have to use fresh pineapple, the one in syrup is not good. In any case, pineapple will become soft and sweet, because in the oven it will lose part of its water and the natural sugars present in the fruit will concentrate. A perfect match with the soft fatness of salmon. The recipe is really simple, as you can see in this very short VIDEO RECIPE on my YouTube channel: I suggest you accompany the pineapple skewers and baked salmon with a mixed salad, maybe also based on fruits and vegetables. You can serve them hot, Freshly baked, or cold, seasoned with an emulsion of extra virgin olive oil and lime.

600 grams of fresh salmon (the thread part)
4 slices of fresh pineapple
extra virgin olive oil, to taste
salt and pepper, to taste
fresh ginger, to taste
fresh chilli (Optional)
lemon juice, to taste
sesame seeds, to taste
The recipe for baked pineapple and salmon skewers is very simple, how to see in the VIDEO TUTORIAL. First remove the skin of the salmon and cut it first into strips and then into cubes of regular size. I do not recommend cutting the salmon into cubes too small, otherwise the fish in the oven will dry too much and will not be soft and juicy.
Put the salmon in a bowl and season with extra virgin olive oil, Salt, lemon or lime juice and grated fresh ginger. If you like, you can also add a few pieces of fresh chili pepper. Cover with plastic wrap and refrigerate for at least 30 minutes.
Meanwhile, clean fresh pineapple, cut it into slices, delete the middle of each slice, which is hard and fibrous. Finally, cut pineapple slices into regular pieces. Once the salmon has flavored, prepare skewers by alternating pieces of pineapple and salmon. Line a baking sheet with parchment paper and grease it with extra virgin olive oil. Sprinkle the pan with a little salt and arrange the skewers. Brush the skewers with a little extra virgin olive oil and complete with sesame seeds.
Preheat the oven to 180 degrees-ventilated. Cook pineapple and salmon skewers for 10 minutes, turning them halfway through cooking. Serve immediately with a mixed salad or steamed basmati rice. Bon appétit!
