a roll of puff pastry ready (or if you prefer homemade)
about 250 grams of tomatoes of the types you prefer, even mixed
100 grams of Greek feta
extra virgin olive oil, to taste
fine salt, to taste
a pinch of sugar
oregano, as hit
fresh basil, to taste
Preheat the oven to 180 degrees static. Spread the roll of puff pastry on a baking tray, without removing the baking paper that protects it.
Wash the tomatoes and cut them in half or slices, Depending on the size. Arrange the tomatoes with the flesh facing upwards on the puff pastry, starting from the center and leaving about 2 centimeters of free board on each side, as you can see in this short video tutorial. Season tomatoes with extra virgin olive oil, salt and a pinch of sugar.
Crumble the Greek feta on tomatoes in a coarse way. Sprinkle everything with plenty of oregano. Cook the quick puff pastry with tomatoes and feta for 15 minutes at 180 degrees and for another 10 minutes at 160 degrees, until the puff pastry is golden and crispy and the tomatoes slightly withered. Bake and let cool for a few minutes. Complete with plenty of fresh hand-broken basil before enjoying.
