Ingredients

320 grams of Carnaroli or Vialone Nano rice

a bunch of asparagus

100 milliliters of sparkling wine

one shallot

extra virgin olive oil

salt and pepper

80 grams of Parmigiano Reggiano PDO

50 grams of butter

 

Procedure

Creamy risotto with asparagus

The creamy risotto with asparagus is simple to prepare, as you see in VIDEO RECIPE. First remove the hardest part of the stem, Wash it and put it in a pot with about 1,2 liters of water. Let it simmer for 30 minutes: With this asparagus broth we will cook the risotto. Then peel the most tender part of the asparagus stems, except the tips. Finely chop a shallot. Brown the shallot in a little extra virgin olive oil and water, until drying. Add the rice and toast for a few minutes. Then, Add the sparkling wine and let it evaporate. After 7 minutes of cooking, add the stalks of the asparagus cut into slices, because they need a few minutes more cooking than the tips.

Continue to add the broth and, after another 5 minutes, the tips of the asparagus that must remain crispy. Bring the risotto to cook (wave and al dente) and stir in the cold butter cut into cubes. Finally, fire off, add the Parmigiano Reggiano and freshly ground black pepper. If the risotto was not creamy enough, At this stage you can add a little more broth and stir the risotto strongly.
