Cold tomatoes stuffed with tuna and potatoes

We are in September, weather so we're still in summer. Now, the phase of bad weather will pass and will certainly warm: When this happens you will again feel like a cold dish, that you can prepare in advance, Maybe feed back from a trip to the sea for a swim that reinvigorates before autumn. Here's what I propose these cold tomatoes stuffed with tuna, boiled potatoes, cucumbers, capers and Mayo. If you love the ingredients cannot fail to please you. In addition, they are really quick to prepare and, If you use the cherry tomatoes or Piccadilly are also a great finger food for a late summer drink. I suggest you use a homemade mayonnaise, But if you really don't feel like preparing it, You can use the ready, in the same amount.

Ingredients for 4 people:

  • 8 round salad tomatoes, not too ripe
  • 4 medium size potatoes
  • 200 grams of drained tuna in oil (therefore net weight)
  • capers to taste
  • salt and pepper
  • 10 pickled gherkins
  • 250 grams of mayonnaise (for the recipe click here
  • a few leaves of fresh basil

Boil the potatoes, depriving them of peel and let cool completely. Meanwhile, wash the tomatoes, remove the cap top and emptied of seeds and vegetation water. Salt them lightly inside.

Cut the potatoes into cubes rather small and put them in a bowl. Add the well-drained tuna,  gherkins sliced, Capers (set aside some’ all the ingredients for the dish seal). Add salt and pepper and then mix with mayonnaise. Normally I put a 250 gram jar but if you want to save calories, as well as use a light mayonnaise, you can 'stop’ when the mixture is well blended.

Fill the tomatoes with the mixture of tuna and potatoes, so that it comes a little over the edge and garnish it all with a few slices of cucumber, some caper, a piece of tuna and a basil leaf. Let rest tomatoes in the refrigerator for at least an hour, making sure to pull out a quarter of an hour before serving so that the flavors can blend perfectly.

THE PAIRING: This is a plate with a strong acidic tendency due to the presence of the raw tomato and mayonnaise. Rather than a wine, We suggest a beer, provided it is light. And we choose Chiara micro brewery Hops, pils produced in Romagna, Riccione, Low fermentation and of delicate flavors.
