I know that many do not like to prepare roasted peppers, nor skin them. But it is not so difficult. I don't like to do it on the gas using the plate or the pan. In the absence of barbecue, I much prefer to prepare baked roasted peppers. The process is very simple, look at the VIDEO RECIPE on my YouTube channel. I suggest you use red peppers preferably, more sodi and pulpy.
To prepare perfect roasted peppers in the oven as on the barbecue, you just have to cook them whole on the oven grill or on a baking sheet covered with parchment paper and placed on the bottom of the oven. Cooking should be done at 200 degrees for about 30 minutes (but it depends on the size of the peppers). And you have to turn them around halfway through cooking. When the skin will begin to wrinkle and become blackish in some places, exactly as if they were on the coals, peppers will be ready.
At this point, to be able to skin them with ease, you just have to close them still boiling in frost bags and drill a hole from which to let out the water that will accumulate inside the bag. The steam that forms will ensure that the skin of the peppers is raised and come off naturally and effortlessly. 6 red peppers
2 cloves of garlic
fresh parsley and/or basil, to taste
extra virgin olive oil, to taste

The preparation of roasted peppers in the oven is very simple, as you see in VIDEO RECIPE step by step. First you have to preheat the oven to 200 degrees static.
Wash the peppers, making sure that they are perfectly intact and arrange them on the oven grill or (recommended choice to minimize the possibility of soiling the oven) on a baking sheet lined with parchment paper. Place the baking sheet in the lower part of the oven, also by placing it directly on the bottom.
Bake for 30 minutes, turning the peppers gently mid-cooked, or until the surface of the peppers has shriveled slightly and blackish patches have formed. Just like you're roasting peppers on the barbecue.
Put the still boiling peppers in one or more frost bags and close carefully. Place the bag near the sink or in a colander over a large bowl and pierce it or cut a piece of bag with a scissors. In this way the water that the peppers will release will be eliminated.
Allow the peppers to cool completely. Once cold, you will see that skinning them will be very simple: the peel of peppers will come off immediately. Also remove the seeds and divide the flaps of peppers into fillets. Now you can use them as a basis for your recipes or as a healthy and light side dish.
SIDE DISH OF ROASTED PEPPERS: if you want to prepare a very fast side dish, finely chopped garlic, parsley and/or basil and a handful of pine nuts and/or almonds. Pepper the peppers with plenty of extra virgin olive oil and fine salt, then add the prepared mint. If you are not vegan, you can also add some finely chopped alice in oil.
