I use extra virgin olive oil and red wine vinegar, lots of Sicilian oregano, fresh mint, garlic and chilli. But you can also use basil, parsley, pink pepper and black pepper. Obviously, It is essential that the aubergines rest in their marinade for at least 12 hours. Then I suggest you prepare them a day in advance and leave them in the refrigerator perfectly covered with plastic wrap, all night.

Aubergines and solanine: What it is and how to eliminate it

Solanine is a glycosidic alkaloid with pesticidal action: in practice, is a Toxic that the eggplant produces to defend itself from insects. The solanine content in the peel and pulp of eggplant is quite low (10mg per 100 grams of product) , but if consumed raw it could have a toxic effect (nausea, vomit, Cramps, headache) especially on particularly sensitive people. As you can see in the VIDEO RECIPE, Sicilian marinated aubergines are simple and quick to prepare. It is important that they rest at least 12 hours in the marinade, so I suggest you prepare them a day in advance and store them in the refrigerator.

Wash eggplants well, remove the ends and slice them thinly. The ideal would be to make thick slices about half a centimeter. Blanch the aubergines in lightly salted water for 2 minutes. Drain them and leave them in the colander so that they lose all the liquid they have absorbed. You can also squeeze them gently.

Meanwhile, prepare the marinade. Finely chop the garlic, Mint (or the aromatic herb you prefer) and chilli. Put the spices and herbs in a bowl, add plenty of oregano, a little salt and then extra virgin olive oil and red wine vinegar to taste. Obviously the marinade must be abundant, to flavor all eggplants. Beat well with a fork to create a creamy emulsion.

Pour a few tablespoons of emulsion into the dish, Arrange a layer of eggplant and drizzle with the marinade. Continue in layers until the ingredients are exhausted. Cover with plastic wrap and refrigerate for at least 12 hours. You can also turn the aubergines once or twice while stored in the refrigerator.
