BASKETS AND SHRIMP SALAD OF GREEN APPLES WITH MAYONNAISE

- 250 grams of ready-made puff pastry
- 500 grams of pink shrimps
- mixed salad, to taste
- 1 Green Apple
- salt and pepper, to taste
- extra virgin olive oil, to taste
- a little lemon juice
- FOR MAYONNAISE PARSLEY:
- 2 egg yolks
- 60-100 ml extra virgin olive oil
- Salt, to taste
- lemon juice, to taste
- a small bunch of parsley
PROCEEDINGS
Clean the prawns and cook in lightly salted boiling water for one minute. Drain and allow to cool.
Preheat oven to 200 degrees static.
Derive from the roll of puff pastry eight circles the diameter of your stencils (my parents got 7 cm diameter). Butter the molds and clothe them with puff pastry. Prick the dough with a fork and brush with egg yolk. Bake for 15 minutes or until the dough won't be swollen and Golden. Allow to cool.
Wash the Green Apple, cut it in half, in quarters, clean the seeds and make it into chunks (I recommend, Let the Peel). Place in a bowl of apples and shrimp and season with a little oil, a few drops of lemon juice, salt and pepper.
For the mayonnaise: beat the egg yolks with the extra virgin olive oil, by placing it flush, until the mixture is very thick. Combine a few drops of lemon juice and salt to taste, then finely chop the parsley and add the mayonnaise. I like very thick, but you can choose your preferred density.
Put on each tartlet few leaves of salad, Add a little’ shrimp and Green Apple Salad. Garnish with a tablespoon of parsley mayonnaise. Serve immediately and enjoy your meal!
