Vegetarian Christmas menu, taste and health

The other day a friend, doing together talk about what we were planning to prepare for Christmas dinner, He told me he was in trouble because her husband's sister had for lunch and the companion, who are vegetarians. Therefore the problem of having to, in your opinion, two separate menus: one for people's normal’ and one for vegetarians, because he did not want to serve a meal just tasty, substantial or appealing right at Christmas. I texted back that you can easily do a vegetarian meal (and for a vegetarian I mean without meat or fish but with eggs and dairy products) for all of us, without sacrificing anything, nor in variety, or to taste, Neither aesthetics. And probably gaining in health. This is my vegetarian menu for Christmas dinner, or even for Christmas dinner if you prefer: three fancies with an aperitif, two first (a cream of vegetables and a dumpling), a second creative, a seasonal salad as ' reinforcement’ and a pudding.

Baskets with taleggio, Apples and walnuts

Baskets with taleggio, Apples and walnuts

Among the starters I propose these shortcrust pastry baskets with apples, taleggio cheese and walnuts: quick to prepare, even if you make homemade shortcrust pastry (here the recipe) You can prepare it in advance and freezing, they are beautiful to look at and delicious to eat.

Sicilian street food: the panelle

Sicilian street food: the panelle

Yet, I suggest a classic Sicilian street food, to prepare in version mignon: the panelle di ceci. A delicious and fried dough, that you can serve alone as an aperitif or with small buttons of soft bread.

Baked omelette with tomato confit and sour cream

Finally, of Mini baked omelets, with tomato confit and sour cream: exquisite, they can be prepared in advance and are delightfully season colors.

Cream of potato soup, celery and Apple

Cream of potato soup, celery and Apple

Two main courses: a cream of potato soup, celery and apples with sour cream, light but tasty, vitamin-enriched and quick to prepare, decorated with red apple slices that are ' atmosphere '.

Pumpkin ravioli

Pumpkin ravioli

And as the first of these fabulous pasta pumpkin tortelli of Mantua with whole wheat flour and topped with a little’ dark chocolate. The pasta is homemade and of course here found the recipe.

Flan

Flan

Let's get to the main course: I chose a cauliflower flan with caramelized walnuts and gorgonzola cream with honey, a refined dish that you feel lack neither fish nor meat.

Sweet and sour pumpkin salad, cabbage and dried fruit

Sweet and sour pumpkin salad, cabbage and dried fruit

As ' salad ', to respect tradition, If you want you can serve a seasonal salad, made with sweet and sour pumpkin, cabbage and dried fruit. Really delicious dried fruit and sour and crunchy thanks to the.

moussealcaffeLOGO3The dessert is a must and you can indulge: I prefer those with a spoon after an important meal and I propose a coffee mousse with hazelnut and white chocolate daquoise.

Looks like a great dinner, I have only one question: eat 3 plates with nuts and honey, two of which are both made of apples will not be a little’ Too much? After a while’ These dishes are annoying and I am afraid that it serves a dish that breaks. What do you think? and what do you recommend? Thanks

Hi Watermelon, are you a vegetarian? If the answer is Yes try to take a look at the page under Vegetarian Recipes, Since last year, yesterday I made many (I love vegetables and little meat hook): you could use a Leek strudel and ricotta instead of cauliflower flan, or carasau bread baskets with vegetables in place of pumpkin salad. But you need for next Christmas this menu? Because if you're looking for simply a vegetarian then maybe comb the blogs in category special may get any ideas. Let me know if you need something special, If you tell me in detail what you need we can draw up a menu together. ADA

ciao grazie per la risposta :)
I'm not a vegetarian and I don't need for Christmas.
I would like to prepare a full dinner and inspired me the cream of potatoes and apples at this menu though I fear combining it to baskets of apples and the flan would have been too sweet and after a while’ would stew.
Although on the other hand there are ingredients in common I can avoid buying a thousand things. What do you recommend to combine with cream? looking for something special and delicious, I like to mix sweet and salty and try new combinations of taste though just putting together the 3 dishes I'm afraid of always having the same taste in the background. I don't like fish, Neither the flesh in the blood.

grazie mille per la disponibilità :)

Then Watermelon (Nice nick, my favorite fruit among other things), the cream is sweet enough to actually taste and we do not recommend the cauliflower flan together because now the cauliflower is not in season. As for the baskets of apples and taleggio, I am a tasty finger food, where the sweet does not prevail, but certainly since we are in spring there are many alternatives: I love the mini quiche with Fava Beans and pecorino (https://www.sicilianicreativiincucina.it/mini-quiches-di-fave-e-pecorino/) or pancakes with tomato confit and sour cream (https://www.sicilianicreativiincucina.it/frittata-al-forno-con-pomodori-confit-e-panna-acida/) or a delicious Fried cheese with apricots (https://www.sicilianicreativiincucina.it/pecorino-fritto-con-crema-di-fave/). As for the main course, I'd take advantage of the latest ricotta to make a leek and ricotta strudel (https://www.sicilianicreativiincucina.it/strudel-di-porri-e-ricotta-in-pasta-fillo/) or, always use meat or fish, you could fall back on eggs poché with Eggplant and tomatoes (https://www.sicilianicreativiincucina.it/uova-poche-su-nido-di-melanzane-e-pomodori/). From what you say I understand you in the kitchen you do well, then I'm sure you can customize fine each recipe. And I'm always here for advice, or just chat.
