Ingredients

320 grams of long-grain rice (Basmati, Apollo, Jasmine)

8 eggs

dark soy sauce, to taste

sesame oil, to taste

the green parts of a fresh onion

a sheet of Nori seaweed (Optional)

sesame seeds, to taste

salt and pepper, to taste

extra virgin olive oil or butter, to taste

Procedure

If you have decided to use the classic steamer or the bamboo one you have to use a disc of cotton or perforated paper to prevent the rice from falling inside the holes. Or you can drill countless holes in a sheet of parchment paper to make the steam come out and the rice cooks..

You have to wash the rice the running water and place it in the steamer, then cook covered, making sure that the steam does not disperse, for about 45 minutes or until cooked. If you want to shorten the time a lot, you can simply boil the rice in a little water, covered and over a very low heat, so that cooking absorbs it all.

Finely chop the spring onion, toast the sesame seeds and cut the Nori seaweed into strips.

When the rice is cooked, put it in the bowls and season it with soy sauce and sesame oil. Cook the eggs in a pan with butter or extra virgin olive oil, season with salt and pepper and, if you like intense tastes, blend the eggs with a little soy sauce that will mix with butter. Pour fried eggs over rice, complete with finely chopped spring onion, roasted sesame seeds and Nori seaweed cut into thin strips. Bon appétit!

OPTIONS: you can add condiments to taste. In Korea, the addition of canned meat is widespread (Spam), Sausage, quickly sautéed vegetables in oil or sweet and sour sauces.
