Today's recipe is fresh and creamy yogurt popsicles and fruit on stick. In Rome it's really very hot and I can't eat (a miracle), that's why I thought about the recipe for these summer popsicles. They are very simple and fast to prepare and, Obviously, you can use the fruit you prefer: peaches, apricots, Plums, strawberries. Perfect for summer snacks, popsicles will appeal to kids because they're cremose, sweet and delicate.
Actually, the consistency of yogurt and fruit popsicles on stick is given by a cross between an icicle and an ice cream. They are made with Greek yogurt, honey and a little’ whipped cream that gives a creamy texture. I tried to make them even without the cream, but the yogurt in the freezer forms ice crystals and the final texture is not what I'm looking for. Honey helps prevent the formation of ice crystals, but that's not enough. A small amount of cream, instead, hinders the formation of crystals. If, though, prefer a lighter ice cream, you can only use yogurt.
Calling them ice cream isn't really right: they're not, but they're good all the same, as well as the quick coffee ice cream, with which I make the ice cream cookie. in a pan, i skipped the fruit for two minutes, to get that syrup that gives the popsicles shades of pink color. You can also use raw fruit, simply by linking it to the yogurt mixture. But I assure you that two minutes of cooking in the pan can make a difference. The other ingredients are : honey, zest and very little lemon juice.
If you don't have popsicle molds (they sell a lot of them on Amazon, and I buy them in silicone), you can use simple paper cups and even muffin molds. In short, whereas you'll prepare them in 10 minutes, it's worth trying. What do you say? Have a good day!
250 grams of Greek yogurt
100 ml of cream
40 grams of millefiori honey or acacia
20 grams of caster sugar
lemon zest, to taste
a teaspoon of lemon juice
150 grams of cherries or other fruit
The preparation of yogurt and fruit popsicles on stick is very simple. Peel the fruit you have chosen. Remove the kernel and cut the fruit into small pieces. Put the fruit in a pan with sugar and lemon juice. Cook over high heat for 2 to 3 minutes: as soon as the juice starts to leak out, turn off the heat and let cool completely. Better to put everything in the refrigerator.
When the fruit is cold, whipping the cream to snow, not too firm. Cream must be creamy but not firm. Mix yogurt with honey. Combine the whipped cream, incorporating piano with a spatula.
Pour a few spoonfuls of the mixture into the popsicle molds. Alternate with small amounts of fruit. Don't put too much fruit in one place, because the fruit freezes and, when you eat ice cream, it'll be too hard. Getting to the end of the mold, thread the stick, cover (with the appropriate cover or with the food film) and store in the refrigerator for at least 6 or 8 hours.
After this time, remove popsicles from the molds. Put the popsicles in a bag for frozen food, that must be well closed. Icicles will remain unchanged for 3-4 days. Have a good day!
