To make homemade fruit popsicles you just have to blend the fruit and then filter it into a strainer. If you use citrus fruits such as oranges or lemons it is not necessary to blend them, just press them and then strain the juice. Then you have to prepare a sugar syrup dissolving the sugar in water and bringing the liquid to a boil.

The amount of sugar depends a lot on your personal taste and the sweetness of the fruit you will use. If you don't want to put sugar, you can use erythritol (if you want to know more read the recipe of cocoa icicles) or the sweetener. Be aware, however, that sugar has important effects both on the conservation of icicles (they are better preserved) and on consistency, because it raises the freezing point and prevents them from freezing excessively.

Of course you will need some molds for popsicles: I buy them on Amazon, but you can also find them in stores specializing in kitchen items.

you can also put inside the popsicles of pieces of fruit: Know, however that the fruit will freeze. I like the feeling of these pieces of fruity ice melting in my mouth. You can flavor popsicles with fresh mint, vanilla or liqueurs. Indeed, one or two tablespoons of liquor (the type you prefer), in addition to giving the popsicles a more particular taste, will make the texture more crumbly and less icy.

Peel the fruit and blend it, then sift through it, in order to obtain a liquid without residues. If you use citrus fruits, you can press them instead of blending them, but you still have to sift through them. Add to the mixture a little lemon juice. If you want to add pieces of fruit inside the popsicles, cut them and set them aside.

For sugar syrup, put in a saucepan the sugar and then the water. Bring to a boil and let boil for 5-7 minutes, so that the liquid is reduced in volume. Allow to cool completely.

When sugar syrup will be cold, pour it into the juice and mix well. Pour the liquid into the icicle molds, close and store in the freezer for at least 12 hours. Fruit icicles are well preserved for about 2 weeks. Bon appétit!
