Ingredients for 8 people:

for the flan

  • 1OO grams of butter
  • 100 grams of dark chocolate at 55%

  • 3 whole eggs
  • 2 egg yolks
  • butter and flour for the baking cups

for the sauce

  • 350 grams of white chocolate
  • 250 of cream
  • 250 ml whole milk

Melt in the microwave or water bath chocolate and butter cut into pieces. Meanwhile, mix the three whole eggs together with the egg yolks until they become white, then add flour and sugar and continue to whisk until the mixture is very puffy and fluffy. At this point, combine melted butter with chocolate, that must be at a temperature of about 30 degrees (If you touch the mixture with a fingertip you should hear him barely warm).

Preheat oven to 200 degrees static grease and flour the cups and pour the mixture to about 1 cm from the edge. Bake for 10 minutes.

Meanwhile, chop the white chocolate, put the cream and milk in a saucepan and bring to a boil. Boil over low heat for 2 minutes and pour over the chocolate, stirring carefully until chocolate melts.

Serve the flan by inverting firmly on the plate and by spraying everything with abundant sauce.
