Ingredients for about 20 finger food:

- 3 eggs
- 10 ml of cream
- 30 grams of grated pecorino cheese Dop

- 500 grams of potatoes
- 200 grams of shelled peas already
- 250 grams of shelled broad beans
- salt and pepper
- a pinch of paprika
- extra virgin olive oil as required
- half a white onion
- a handful of chopped parsley
Preheat the oven to 200 degrees. Chop thinly the onion. Peel the potatoes and cut them into thin slices with a knife or mandolin. Put a little oil in a pan and add the onion: Let it FRY and, When it is dried, Add potatoes. Season with salt and pepper and cook covered, combining hot water gradually if necessary, for 5 minutes. Turn up the heat and add the sweet paprika, peas and beans and cook the whole thing, still covered, for about 15 minutes.
In a bowl beat the eggs with the cream, the Parmesan, parsley and pecorino. Combine the vegetables and mix well. Put the mixture into silicone baking cups and bake for 10 minutes, as long as the pie won't be puffy and Golden. Allow to cool a minute or two, unmold and serve.
