Potato patties, beans and peas. Put the warm season, a warm evening, a nice terrace with flowers and without mosquitoes. A dinner with friends and a cold bottle of beer. According to you, These finger foods, These mini pancakes with potatoes, peas and beans, not immediately bring joy and desire to chat? Very easy to prepare, are so small that you eat in one bite and, saw that one leads to another, you have to prepare a lot… This recipe won the “Green food and the chefs of the landscape” in the exhibition ' masters of landscape’ Bergamo in 2013.

Ingredients for about 20 finger food:

  • 20 Silicon moulds for mini muffins (my parents have a diameter of about 5 cm)
  • 3 eggs
  • 10 ml of cream
  • 30 grams of grated pecorino cheese Dop
  • 30 grams of grated Parmesan cheese After
  • 500 grams of potatoes
  • 200 grams of shelled peas already
  • 250 grams of shelled broad beans
  • salt and pepper
  • a pinch of paprika
  • extra virgin olive oil as required
  • half a white onion
  • a handful of chopped parsley

Preheat the oven to 200 degrees. Chop thinly the onion. Peel the potatoes and cut them into thin slices with a knife or mandolin. Put a little oil in a pan and add the onion: Let it FRY and, When it is dried, Add potatoes. Season with salt and pepper and cook covered, combining hot water gradually if necessary, for 5 minutes. Turn up the heat and add the sweet paprika, peas and beans and cook the whole thing, still covered, for about 15 minutes.

In a bowl beat the eggs with the cream, the Parmesan, parsley and pecorino. Combine the vegetables and mix well. Put the mixture into silicone baking cups and bake for 10 minutes, as long as the pie won't be puffy and Golden. Allow to cool a minute or two, unmold and serve. If you like, You can accompany the patties for finger food with a few drops of balsamic vinegar.

THE PAIRING: A beer for these potato patties, beans and peas. With its fruity aromas that sweeten the bitter taste, This 4 hops Lager produced by Angelo Poretti brewery is right for our: potatoes, broad beans, peas, the flavors of the egg and parmesan and pecorino there go hand in hand. A cold beer, from the foam and light body, for a carefree flat but that invites you to continue the bis to infinity.

In addition to the usual colors that in summer are the ultimate in kitchen, This recipe is extremely interesting also for the presence of paprika that marries the sweet peas and beans, TAtY
