Custard flan with apples and cranberries

Good morning! Today a custard baked with apples and cranberries. This is a dessert that I love, because of its versatility, ease of preparation and the sweet taste, soft, almost childlike. Is’ a simple baked custard, in this case, enriched with apples and cranberries, but that you can customize using really any kind of fruit, winter and summer (with the exception of citrus fruits, too rich in water). In this recipe I use a very special ingredient, buffalo milk concentrate (Latterì), but I give even doses to prepare this delicious cooked cream with normal ingredients, that is, milk and cream. For some time I had discovered the burro di bufala, I use all the time, and now I'm appreciating this product that allows you to use less sugar and less starch in sweet and savory dishes brings delicacy and softness, with a unique and unmistakable flavour. In short, with or without the buffalo milk you have no excuse not to try this cake!

CREAM TO BAKED APPLES AND CRANBERRIES (ingredients for 8 verrine or a baking pan 20 cm)

INGREDIENTS

  • 3 tart apples Igp
  • 150 grams of blueberries
  • 3 eggs
  • 60 g of melted butter
  • 120 milliliters of buffalo milk (or 60 milliliters of whole milk and cream 60 ml)
  • 100 grams of brown sugar
  • 40 grams of flour 00
  • cinnamon powder as required
  • the zest of a lemon rind
  • a pinch of salt
  • 20 milliliters of grappa (I use those thirty grappa)
  • just enough butter to grease the Pan
  • icing sugar to decorate the cake

PROCEEDINGS

For the cooked cream with apples and cranberries, You need to preheat the oven to 170 degrees static. Put the eggs in a bowl, sugar, salt and cinnamon: Mount everything with an electric mixer until the mixture is puffy and soft, then add the sifted flour, slowly and buffalo milk (or the milk and cream mixed together) some’ at a time, then lemon zest. Finally, Add slowly the melted butter and brandy. At this point you should have a fairly fluid and velvety.

Peel the apples and cut them in half before, then into quarters and then slice. Butter the cake pan or individual casserole and arrange the slices of apple and cranberries, then cover with the mixture of eggs and milk. Bake the cooked cream with apples and cranberries for 20 minutes (but if you decided to make a cake you need to cook for at least 35-40 minutes) and check the cooking by touching the surface of the cake with a finger: If she resists while remaining soft, The cake is ready. Before serving the cooked cream with apples and cranberries, it was delicious but also warm and cold that you can accompany with vanilla ice cream, sprinkle with powdered sugar. And Bon Appetit!
