Banana Cupcakes with cinnamon and walnuts

A sweet and soft cupcake, with a delicate flavor of banana and cinnamon that will appeal to even the smallest and the cream cheese frosting and rich. Today I leave you the recipe for a fluffy muffins with banana, with nuts and cinnamon in the dough. The recipe of the base is freely adapted from the book The Hummingbird bakery, but I have increased the amount of sugar in the dough, dividing it in half and half of granulated cane that gives a richer flavor to cupcakes, I added walnuts inside and even cheese frosting, which makes this very trick, very special. Your children will like crazy, I guarantee.

Makes about 16 medium-sized cupcake or 12 large:

  • 350 grams of flour 00
  • a pinch of salt
  • 2 teaspoons baking powder
  • 1 generous teaspoon of cinnamon
  • 100 grams of caster sugar extra fine
  • 100 grams of brown sugar
  • 370 milliliters of buttermilk or skimmed milk
  • 1 whole egg
  • half tablespoon vanilla extract
  • 70 g of melted butter
  • 400 grams of bananas peeled and mashed with a fork, net weight
  • 60 grams of chopped walnuts

for the frosting:

  • 300 grams powdered sugar
  • 200 grams of cream cheese
  • cinnamon and a few banana slice for decoration

Preheat the oven to 170 degrees static. Put the flour in a large bowl, sugar, Salt, baking powder and cinnamon. In another bowl beat with a whisk or fork buttermilk with the egg and vanilla extract and add this mixture to the dry ingredients, stirring with a wooden spoon to mix all the ingredients.

Add the warm melted butter and mix again until dough is smooth, then add the mashed bananas and mix mixing everything. Finally, add walnuts. Pour mixture into cups for muffins, filling them to 2/3 and bake for about 25 minutes. Remove from the oven when the cakes will be puffed and golden and let them cool on a wire rack.

For the frosting, stir with a whisk or electric low speed, cream cheese with icing sugar, until the mixture is soft and well blended. With a pastry bag cupcakes garnish with abundant frosting, decorate with a sprinkling of cinnamon and a banana slice and serve.
