Cream of potato and broccoli with paprika

Today, a vegetable cream really easy and tasty, perfect for chilly evenings and for those who did not really want to cook. broccoli, potatoes and sweet paprika. Is’ one of the best solutions if you want to prepare a dish fairly light but comforting and so creamy and flavorful, perfect for a cool evening. The creaminess in this soup is natural, because the potato contains starch, but in the recipe you will find among the ingredients 4 tablespoons of cream or whole milk per person and grated cheese: if you want a very light dish ometteteli, and so if you are vegan.

Ingredients for 4 people:

  • 800 grams of broccoli, net weight
  • 3 potatoes
  • a spring onion
  • 6 Tablespoons extra virgin olive oil
  • sweet pepper as required
  • Grated Grana Padano PDO enough (Optional)
  • 4 tablespoons fresh cream or whole milk (Optional)
  • vegetable broth as required (you can replace it with a nut)
  • salt and pepper

Blanch the broccoli in salted water for 10 minutes, then let them into small pieces. Peel and wash the potatoes and cut into cubes. Finely chop the spring onion. Place in a saucepan the onion and oil and let it wither, add the potatoes and the broccoli and brown lightly, then cover with the vegetable broth.

Season with room and pepper and cook for 20 minutes or until the vegetables are cooked through. Blend all the ingredients with the mixer (taking away some top of broccoli to garnish the dish if you like) and replace the vegetable cream in the pot: season with sour cream or milk, adjust if necessary with salt and pepper and add a teaspoon of paprika Satin, then thicken it according to your taste.

Just before serving, flavor the cream with plenty of grated Grana Padano, garnish with some top of broccoli and sprinkle with paprika. Bon appétit!

Hi Lalla, As you see there are 4 tablespoons of cream or whole milk Optional: I appreciate the richer textures and creamy, but of course you can not put to better enjoy the taste of vegetables or to be lighter. Usually I put a tablespoon of cream or milk in person because I like more the creaminess that you get well. A hug, ADA
