Today, a vegetable cream really easy and tasty, perfect for chilly evenings and for those who did not really want to cook. broccoli, potatoes and sweet paprika. The creaminess in this soup is natural, because the potato contains starch, but in the recipe you will find among the ingredients 4 tablespoons of cream or whole milk per person and grated cheese: if you want a very light dish ometteteli, and so if you are vegan.
Ingredients for 4 people:
- 800 grams of broccoli, net weight
- 3 potatoes
- a spring onion
- 6 Tablespoons extra virgin olive oil
- sweet pepper as required
- Grated Grana Padano PDO enough (Optional)
- 4 tablespoons fresh cream or whole milk (Optional)
- vegetable broth as required (you can replace it with a nut)
- salt and pepper
Blanch the broccoli in salted water for 10 minutes, then let them into small pieces. Peel and wash the potatoes and cut into cubes. Finely chop the spring onion. Place in a saucepan the onion and oil and let it wither, add the potatoes and the broccoli and brown lightly, then cover with the vegetable broth.
