4 artichokes

Artichokes and potatoes in a pan (stew)

Add the artichoke stems and season with salt. Cover and cook for 5-6 minutes. Add the artichoke hearts, half the parsley and a little vegetable broth or hot water.

Cover and continue cooking for 10-12 minutes or until the artichokes and potatoes are soft but still firm. Top by adding the remaining parsley and plenty of freshly ground black pepper. Bon appétit!
