Baked breaded squid, light and tasty, crunchy and with few feelings of guilt. Let's be honest: fried squid is a delight and it is not possible to make comparisons. A nice fry of paranza fish with nassa shrimp, calamari, anchovies, cod and red mullet is unbeatable. But the fried squid, in particular, they are not easy to replicate at home and, if you want to try a valid alternative, save this recipe.
Breaded squid can be prepared in the oven but also in an air fryer, If you prefer. I suggest you, as you see in VIDEO RECIPE, to marinate for about 30 minutes, squid already cut into extra virgin olive oil and lemon juice. I like to flavor breading with parsley and chopped capers. I also add a little’ grated pecorino, that gives the squid an extra gear. You can also add toasted sesame seeds, a pinch of garlic powder, sweet or smoked paprika, Curry. In short, indulge yourself.
I recommend to respect the cooking times: 15 minutes in a ventilated oven and preheated to 180-190 degrees. In this way the squid will remain soft and not chewy inside. If they were not golden enough, you can use for 2-3 minutes the oven in grill function. 800 grams of squid already cleaned
extra virgin olive oil
the juice of half a lemon

Wash the squid well, cut the body into not too thin slices and in half lengthwise the part with the tentacles. If you bought squid to clean, you can look in this video recipe how to clean the house quickly and easily.
Once the squid is cut, put them on a plate and season with extra virgin olive oil, salt and lemon juice. Cover with plastic wrap and leave to rest in the refrigerator for 30 minutes.
Meanwhile, we prepare the breading: finely chop the parsley and capers in salt (well washed and wrung out), add them to breadcrumbs together with pecorino cheese. Season with salt and pepper.
Preheat the oven to 180 degrees-ventilated. Line a baking sheet with parchment paper and grease it with extra virgin olive oil (use a brush, a spoon will suffice). Bread the squid in the breadcrumbs mixture and place them on the baking sheet. Sprinkle with a little oil (you can also use an extra virgin olive oil in spray format, especially if you have decided to cook the squid in the fryer) and a few drops of lemon juice.
Cook for 15 minutes, if at the end of cooking the squid were not golden enough, you can use the grill function for 2-3 minutes. Serve immediately. If you love salsa, I suggest a mayonnaise, simple or herbal, or a Greek yogurt sauce, olive oil and lemon. Bon appétit"
