Orange cake with chocolate ganache and puddings

Ingredients for 4 people:

  • 100 grams of cooked wheat
  • 200 ml whole milk
  • the juice of half an orange
  • the rind of an orange rind
  • 1 tablespoon sugar
  • 5 grams of butter
  • 150 grams of ricotta cheese
  • 50 grams caster sugar extra fine
  • 1 whole egg
  • Orange Blossom water as required
  • a pinch of cinnamon
  • 30 grams of candied orange and Citron mixed

for the ganache

  • 100 grams of dark chocolate
  • 100 ml of cream
  • a little grated orange zest

Cook the corn over low heat in a saucepan with milk, zests and juice, the sugar and butter. The corn should be cooked until absorbed the milk and it will not become creamy and dense enough. Stir often because it tends to stick to the bottom. Once cooked, cool.

Sieve the ricotta and mix with the sugar until the mixture is creamy and smooth. Add the whole egg slightly beaten, the cooked wheat, the cinnamon and the orange flower water. Preheat the oven at 180 degrees.

Butter and flour the molds, then pour the mixture almost to the edge. Put the cups in a baking pan filled with water up to 2/3 high and bake for 1 hour and 30 minutes. The puddings should be caramelized outside and, to the touch, soft but firm. Remove from oven and allow to cool.

For the ganache, chop the chocolate, put the cream and orange zest in a saucepan and bring to a boil. Pour the boiling cream over the chocolate and stir with a spatula until you have a thick sauce, smooth, glossy.

Serve warm or cold pasta pudding, with dark chocolate sauce and hot Orange.
