Avocado toast with salmon and egg: a quick dish that has become a classic of brunch and American breakfast together with the amazing eggs Benedict. It is a kind of BRUSCHETTA GOURMET, an open sandwich made from bread in a box or artisan bread, with avocado seasoned with oil, Salt, pepper and lemon or orange juice. The toast thus becomes a canvas on which to place your favorite ingredients. One of the most classic combinations is that between salmon and avocado. And of course the egg pochè, cooked in acidulated water and with soft yolk, practically liquid, complete the dish to perfection. Alternatives for a perfect avocado toast

As you can see from the VIDEO TUTORIAL it is a very simple recipe that lends itself to countless variations and customizations: you can use scrambled or fried eggs with a bull's eye instead of a little, Prague-type smoked ham instead of salmon. Or boiled and steamed shrimp seasoned with citrus juice and extra virgin olive oil. A great classic is the combination with spreadable cheese and fresh tomatoes seasoned with oil and oregano. Of course any kind of bread is fine. You can use the BAGEL, that are prepared at home without any difficulty, a BREAD IN BOXES (also at PISTACHIO) or one of many BREAD RECIPES homemade that you find on the blog.

One recommendation: to prepare avocado toast, in any variant you prefer, you need a ripe avocado at the right point. Not hard or too soft. Not an easy thing: I suggest you use, If you can, the Hass variety or one of the avocados grown in Sicily that for some time have been found quite easily on the market.

Ingredients

2 sandwiches of the type you prefer or 4 slices of bread in a box

2 ripe avocados

150 grams of smoked salmon

4 eggs

lemon and/or orange juice, to taste

salt and pepper, to taste

extra virgin olive oil, to taste

toasted sesame seeds, to taste (or pumpkin, Sunflower, Lino)

The avocado toast recipe is very easy to prepare, as you can see in this short VIDEO TUTORIAL. If you use the slices of bread in a box toasted over low heat on a grill, if instead use sandwiches as I did, divide them in half and toast them on the crumb side. Remember to toast the bread over low heat so that it becomes slightly crispy on the surface while remaining soft at the bite.

Cut the avocado, remove the pulp and crush it coarsely with a fork. Season with extra virgin olive oil, Salt, pepper and lemon juice, lime or orange. This is both for the taste and to prevent the pulp of the avocado from oxidizing becoming dark. Season the smoked salmon with extra virgin olive oil and a few drops of lemon.

How to cook eggs for avocado toast. Spread the avocado on toast, add the salmon. Cook eggs as you like: I cooked them in a shirt, pouring the shelled egg into a saucepan with boiling water where I also poured a tablespoon of white wine vinegar. In this case, to obtain a soft yolk and a well-cooked egg white, it will take about 2 minutes of cooking. If you prefer, you can cook the fried egg in a pan with a bull's eye or scrambled.

Complete the avocado toast with eggs and season with freshly ground black pepper and toasted sesame seeds. Serve immediately. Bon appétit.
