A rice dish recommended to all lovers of cheeses: four cheese risotto with ham ring. Will that I've lived for seven years in Milan, but taleggio, bagoss, bitto, gorgonzola, casera and many other cheeses lombardi I have left in my heart. It wasn't so hard to pick some for this rich first course: I opted for taleggio, stracchino, Grana padano and provolone, allowing me an ' exception ', the mozzarella, essential to make spin’ all. Rice is enclosed in a casket’ Ham. For other rice dishes take a look at those with PEAR and gorgonzola, with artichokes and bottarga (dried fish roe), with lettuce and Stilton, with pumpkin and Castelmagno.

Ingredients for 4 people:

  • 350 g of Arborio rice
  • 250 grams of ham slices
  • 80 grams of taleggio
  • 80 grams of soft cheese
  • 80 grams of sweet provolone
  • 50 grams of grated Parmesan cheese
  • 80 grams of mozzarella
  • 30 grams of butter
  • a little finely chopped Rosemary
  • salt and pepper

Heat a large pot with salted water and, When it comes to the boil, pour in the rice and cook for the time indicated on the package. Preheat oven to 200 degrees.

While rice is cooking tiny dicing all cheeses. Take a cake doughnut (You can't give up’ the hole and use a bowl that can go into the oven and shape into a pudding) and coating it with slices of ham, leaving out the edges which will then be folded on top for ' close’ the timballo.

When the rice is cooked remove from the heat, Combine butter and Rosemary and stir and pour slowly the cheeses, stirring vigorously with a wooden spoon until they have loose. Pour the rice into the Pan ring, cover the surface with layers of ham and bake, in the oven, for 3 minutes, the time it takes for the cheese melts and begins to spin.

Remove the rice from the oven and let it rest 5 minutes. Remove from oven and, After a few minutes, unmold onto a serving plate.

THE PAIRING: the complexity of these cheeses deserves a pairing with white wines very fragrant and good acidity that counteract the fatness. An interesting effect of this type is obtained by the Roero Arneis Docg. If you prefer to match with this dish a beer, the best choice may be a Blanche, traditional Belgian beer brewed with wheat use. The tone is slightly honey-like flavors’ low-alcohol beer and make this ideal for enhance the flavor of the cheeses and accompany the rice. Among many in the market suggest that the Ambrosia Toccalmatto brewery or brewery Rat Weizen Montegioco.
