Christmas Eve dinner, I just Cook…

By early December also start the race in the preparations for the Holidays. I thought, then, to make some posts that collect my suggestions for various festive menu (Christmas Eve, Christmas, New Year's Eve and lunch on 1 January), obviously starting with the Christmas Eve dinner. A dinner, traditionally, It is thin, that is, without meat. Each photograph is directly linked to the recipe, then click on the photos, and will open the recipes: I thought of a rich but light fish menu, with many preparations that you can do in advance, It composed of two starters, two first, a main course and dessert. I give you also some alternatives to the recipes that I have chosen. The dishes have all the red notes, in theme with Eve. And then, after midnight, to open all the presents! In the coming days will follow other three post, on Christmas lunch, the dinner on 31 December and New Year's lunch. I hope you like them and that my suggestions will be useful.

Fish balls with tomato sauce

Fish balls with tomato sauce

Anchovies and salmon patties (but you can choose the fish you prefer) on a simple tomato sauce. The meatballs can be prepared in advance and fry well in advance and keep warm, as well as the sauce.

Salmon tartare and guacamole

Below I suggest a Salmon tartare with avocado, sour cream and lumpfish roe: even in this case, everything is prepared in advance.

Spaghetti with meat sauce squid

Spaghetti with meat sauce squid

What first dishes here is an alternative to the classics spaghetti with clams : spaghetti with meat sauce squid and almonds, a sauce that is prepared before and in a hurry, then you just need to cook pasta. The lemon scent is extraordinary.

Risotto with Zucchini cream and mullet

Risotto with Zucchini cream and mullet

How risotto, an indispensable dish, I chose this with cream of Zucchini (you before and now the green ones are found all year) and fillets of red mullet just blanched.

Codfish with cream of peppers

The second fish is full of tradition, who wants codfish Prince eve of the boards: I chose this very simple, baked in the oven, perched on a pepper cream (preparing in advance) with baked potatoes and fried leeks, but if you want an even simpler dish to try baked with potatoes and tomatoes.

Soup of strawberries with zabaglione semifreddo (by Saad)

Soup of strawberries with zabaglione semifreddo (by Saad)

Finally the sweet: considering that surely will come to the table Panettone and Pandoro, nougat and crunchy and dried fruit, I opted for a light dessert, a zhot uppetta of strawberries with zabaglione semifreddo. The semifreddo can also be prepared with a week in advance and cook soup first and then warm up. If you do not want to make the semifreddo, buy the ice cream, the result will be good anyway!

Hello Joan! I'm at work on the next post but especially on New Year's Eve: a long dinner deserves a lot of courses and how we Sicilians know we love 'always abound'!!! A warm hug, ADA
