Sliced meat Chianina to four salts with potatoes

Sliced grilled chianina, with baked potato and 4 different types of salt to use on meat according to your taste. Is’ a plate from ' carnivores ': the meat should be rare on the inside and have a crust on the surface. The salts that we used are a salt liquorice of Calabria, a salt with chopped Mediterranean herbs of Sardegna, the Maldon salt and finally a Hawaiian red salt.

Ingredients for 4 people:

  • 2 Chianina steaks from 700 grams each (a breed of cattle bred in Tuscany)
  • extra virgin olive oil as required
  • Maldon salt, Salt liquorice, sale of Hawaii and herb salt
  • pepper
  • a sprig of Rosemary

for the outline:

  • 4 large yellow potatoes
  • extra virgin olive oil as required
  • salt and pepper
  • a sprig of Rosemary

For the outline, wash, Peel and cut the potatoes into thick slices. Leave it for an hour at least in cold water, then dry well. Preheat the oven to 180 degrees and place the potatoes on a baking sheet and cook them with olive oil, Salt, pepper and Rosemary and putting them on a single layer. Mix them well so that they are well greased and bake for 20 minutes or until they are well browned.

While the potatoes are cooking rub the Rosemary on steaks, that must be at room temperature. Heat the grill and, over high heat, Cook each steak for a minute and a half per side (so the meat will be quite rare, If you prefer more crush prolonged cooking times but not exaggerated, because most cooks more becomes hard). Cut the steak into pieces and dress with a little olive oil and a sprinkling of pepper: serve with 4 salts available, the baked potatoes and a little Rosemary for garnish.

THE PAIRING: our advice is to combine a Tuscan Docg Chianti Red. We chose the Chianti Superiore della Fattoria del Colle, producer Larry Celley. A red with hints of violets, very intense, structured and soft. Perfect with grilled meat and flavorful.
