The cookie dough per roll

  • Today we present a very versatile dough, the BISCUIT DOUGH PER ROLL, that you can fill with creams, cream, ganache and fruits and decorate to your liking by creating simple cakes, but also very rich and elegant, like the classic Yule log. Here are the ingredients for a roll for about 10 people:

  1. 6 eggs
  2. 80 grams of flour 00
  3. 150 grams of caster sugar
  4. 500 ml of whipping cream

Preheat the oven to 180 degrees. Place in a bowl 3 whole eggs and three egg yolks and the remaining three egg whites in another bowl. Put 75 grams of sugar in each bowl and assemble before the whole eggs and yolks with sugar, then the remaining three egg whites with sugar. Combine the egg whites to the first compound, then add the sifted flour and mix. Line a large baking sheet with parchment paper and pour the mixture, spreading it evenly to a height of a centimeter. Bake for 12 minutes or until browned. When the cookie is still hot, Unplug the parchment paper and place it on a sheet of parchment paper wet and wrung, then roll it up along with the parchment paper so they retain moisture and let it rest for 10 minutes rolled onto itself. That won't break when you will stuff.
