Though, Repeatedly posting it Instagram, I noticed from the comments that many had never thought to prepare such a thing. Then, because the cabbage is good, seasonal and does well, I thought I would spend a moment to take pictures of this dish that could be a side dish or, served with eggs as I suggest here, a single plate. Ingredients for 4 people:

  • 1 kilogram of cabbage (gross weight)
  • 800 grams of potatoes
  • a chili pepper
  • 2 cloves of garlic
  • 6 anchovy fillets in salt or oil
  • extra virgin olive oil, just enough
  • salt and pepper, just enough
  • 4 eggs

Clean the cabbage: cleaning this amazing vegetable is easy, just remove the leaves firmly pulling down. The trunks, that are hard, you can delete them or make a broth for soup or risotto. Smaller sprouts and tender you can leave them whole. Wash the cabbage and set aside.

Peel the potatoes and cut into pieces. Clean the garlic and cut into slices (or if you prefer a less intense flavor you can simply crush him with a knife and leave it whole. Cut the red pepper: If you want your cabbage with potatoes is very spicy let the seeds, otherwise, remove it.

Put in a pan abundant olive oil, add the garlic and chilli, Heat over low heat and saute until the garlic turns golden. Add the anchovies and let them dissolve slowly in the oil. Turn off the heat.


Boil the potatoes in salted water for 7-8 minutes, then add the cabbage and cook for another 5 minutes. Drain the vegetables and put them directly into the pan with the sauce prepared earlier and jump over high heat for 5-6 minutes, so that the vegetables on flavor.

Meanwhile, 4 to prepare eye egg, trying to cook well the egg white and keep the liquid yolk and season with salt and freshly ground black pepper. Serve the cabbage and potatoes along with a fried egg and a few slices of toasted homemade bread. Bon appétit!
